Tatertot Casserole, a classic. Looks a little like dog food, tastes like creamy, cheesy, comfort in a bowl. I like to make this for days when I’m going to be off the ranch. The guys can throw it in the oven or microwave, and they’re good to go!
Tatertot Cassrole:
1.5 lbs ground beef
Onion
Minced garlic
1 can cream of mushroom soup
1/2 cup milk
4 tablespoons sour cream
1 can corn
Shredded cheese
2 lb bag of frozen tatertots
Sauté onion and garlic. Add beef, cook, drain fat. In a large bowl combine soup, milk, sour cream. Add beef, then corn. Mix in about 1 cup shredded cheese.
In a 9x13 baking dish, layer half of the tatertots, top with beef mixture, cover with remaining tots and more cheese.
Bake at 350° F for 30 minutes
